I’m a sucker for breakfast. In my dream world, I wake up every morning to the smell of fresh coffee and enjoy a solid hour of relaxation, waking up to the day’s news while eating something hearty and healthy.
In my real world, though, I usually end up jumping out of bed and heading straight to my laptop (bad), reading emails before my eyes are even really open (bad), and pushing past stomach growls to “get more done” before another refill in the mug o’ joe (also bad).
I NEEEEEEED breakfast, though, coupled with coffee, or else I’m somewhat reminiscent of a big-eyed angry (read: hangry) troll.
But FEAR NOT, all you other hangry trolls out there – I found what I swear to be the *perfect* breakfast for all of you college girls on-the-go who need your #butfirstcoffee and breakfast before busy days, too.
This is officially called: “Overnight Strawberry-Chocolate Chip Oatmeal Pudding,” but I’ve fondly redubbed it: “Bliss.”
What you’ll need:
I throw in a packet or two of Born Sweet™ Zing™ Zero Calorie Stevia Sweetener for an extra flair, because I like having a sweet kick in the morning. In this particular batch, I didn’t use any vanilla because I didn’t have any in stock in the moment, so the Zing™ Zero Calorie Stevia Sweetener hit the spot. Otherwise, I substitute strawberry preserves for cherry jam because I like the chunks of fruit; the original recipe also calls for slivered almonds, but I’m not as big a fan of the crunchy pieces, so I nix those.
I usually at least triple the recipe because I eat this stuff up like crazy. I made this routinely on Sunday nights over the summer when I was living with J, and we both ate it every. single. morning. without fail for breakfast. It’s rare I find something I can eat for breakfast day in and day out without getting bored of the flavor or texture and wanting to mix things up, but from this oatmeal pudding I cannot stray.
It’s the bomb dot com.
And the best part? You literally throw all of the ingredients into a bowl together (or a large vat if you’re like me and like to supersize things), stir, and let sit in your fridge overnight. Then VOILA, magic for the day’s start. Can’t stop won’t stop.
Once you take it outta the fridge the next day, separate into whatever little containers float your breakfast boat, and you’re golden. THAT’S IT!
I love it, the fiancé loves it, my parents love it, and every single friend with whom I’ve shared with recipe is now a #1 fan. So I’ve gotta hunch you’ll love it, too!
