Happy MONDAY! Popping in with a personal pumpkin pizza “recipe” to share with you for the season – spoiler alert: she’s DELICIOUS. I first found this easy pumpkin pizza idea in Olivia’s Highlights magazine of the month and thought it looked equal parts cute + attainable as a kid-friendly meal that didn’t take an obscene amount of time to prepare. For as cute as some Instagram-friendly kid meals are, I just don’t have time to cut out 32 eyeballs or wings to make a zoo of edible creatures on any given Tuesday. Ya feel? These personal pumpkin pizzas are quick, simple, and yummy for all; I ate three myself after filming the Instagram Reel tutorial (coming today – stay tuned!). INGREDIENTS:
- English Muffins
- Your favorite pizza sauce
- Your favorite shredded cheese (we lovelovelove Tillamook!)
- 2 orange bell peppers
- 1 green bell pepper
These could not be simpler, which I lovelovelove! First, halve your English muffins and preheat your oven to 350 degrees.
Next, put a dollop of pizza sauce in the center of each muffin half – spread it out evenly. Sprinkle your shredded cheese on top of that.
Slice your orange bell pepper; you should have pieces that curve at the ends. For each personal pumpkin pizza, I used about 5 pepper slices; two needed curvier ends to be the curves of the pumpkin, while one shorter or straighter piece went in the middle.
Chop your green bell pepper into smaller bits – these will be your pumpkin pizza stems!
That’s it for assembly – bake for about 20 minutes at 350, or until your english muffins are golden brown and cheese is toasted. We then set to BROIL for about 2 minutes (but always watch it on broil so it doesn’t burn!) to get the cheese bubbly and peppers toasted through. THAT’S IT!

Personal Pumpkin Pizza
This fun mini pumpkin-inspired pizza is a quick, seasonal take on a family favorite that your kids will even love!
Ingredients
- English Muffins
- Pizza sauce
- Shredded cheese
- 2 Orange bell peppers
- 1 Green bell pepper (for the stems!)
Instructions

Halve your English Muffins

Put a dollop of pizza sauce on each muffin half. Spread evenly.

Sprinkle shredded cheese on each muffin half.

Cut orange bell pepper in thin slices. Snip the curved ends off of one pepper strip for each pumpkin pizza, for the middle of the pumpkin!

Slice green bell pepper into small, stem-like nuggets

Arrange orange bell pepper slices onto each pumpkin pizza so that they resemble a pumpkin! Turn the curved pieces inward to enhance the "round" pumpkin look, with one straighter pepper piece in the middle.

Add a little green stem on top of each pumpkin pizza!

Bake for 15 minutes at 350, or until they're golden brown with toasty cheese - BROIL briefly (about 1-2 minutes) after to finish toasting your peppers!
